Everything you ever wanted to know about fermenting! In this class we will learn to harness the microscopic world to enhance flavor, nutrition and digestibility, turning raw organic ingredients into foods and condiments which far surpass their commercially available counterparts. We’ll start with a thorough introduction to health benefits, essential equipment and safety information. We’ll learn to catch a wild ginger beer bug and then work as a group to start a batch of mixed vegetable sauerkraut. Time Allowing we will discuss kim chi and dill pickles and touch on probiotic drinks(kombucha jun lactof-ermented soda). There will be veggies to bring plus a $10 supply fee in cash on day of class.
